It's far more common than most people realize to encounter anchovies prepared the same way as sardines and mackerel. These anchovies are not the salt-cured kind, but rather. laid out as full pieces, steam cooked and then sealed in flavored olive oil. Very tasty mushed with a little cream cheese and fresh parsley and used as a sandwich spread or just eaten out of the can as a snack.
