Alalunga is a relatively new cannery, a project that was started only a few years ago by two brothers from the Santander area in northern Spain, on the coast of the Cantabrian Sea. This is made in the classic style - mackerel fillets, olive oil, and a touch of salt. This minimalist approach allows puts the fish's natural flavors and texture to the forefront. Pricey, but excellent and well worth it.
