Beautifully firm and mild trout with some richness from the olive oils and a touch of bright citrus in the finish. We find trout makes a nice break from heavier, oilier ocean fish. Try this over chilled white beans with parsley, cracked pepper, and a glass of crisp Vinho Verde or Albariño.
