Wonderfully mild and slightly salty, these are terrific thrown in a pan with a little butter, some oil from the can, chopped garlic and a little red pepper flakes. They only need a few minutes so cook your pasta first, then add it to the pan with the cockles right at the end. Serve with a generous helping of chopped parsley. Eccellente!
