Espinaler itself began in 1896 as a humble seaside tavern in Catalonia, later becoming famous for Sunday vermouth, quality tinned seafood and, in the 1950s, a proprietary vinegar‑based house sauce created by Ventureta Roldós. This is an intensely vinegared appetizer sauce built on habanero, cayenne and a “secret” spice blend, designed specifically to enliven conservas, patatas fritas and assorted tapas without completely obliterating their personality, but you can merrily drizzle it on anything that doesn’t run away!
