Ekone is a branch of Taylor Shellfish Farms in Washington State, one of the Pacific Northwest’s major oyster growers. The oysters are Pacific oysters harvested from waters in Willapa Bay, then steamed in the shell, shucked, brined, and hot‑smoked before canning.
