Conservas Santos is a family operation out of Albufeira in the Algarve, canning since 2010 with fish caught daily off the Portuguese coast. These sardines sit in a bright lemon sauce that cuts the richness of the fish without burying it - zesty, clean, and about as refreshing as a tin gets. No dyes, no preservatives, just fish and citrus. Flake them over a plate of boiled potatoes with good olive oil and a lot of black pepper.
